- chicken marinade:
- 1 tsp ground cumin
- 1/2 tsp mustard powder
- 2 tbsp oil
- 1 tbsp brown sugar
- 1 tsp chilli powder
- 1/2 tsp salt
- 1/2 tsp pepper
- mix in a bowl until dry ingredients are incorporated.
- place 6 chicken breasts in mix and coat evenly.
- place chicken on baking sheet and bake for 1 hour at 180C/350F
- remove from oven, and shred chicken
- place chicken in a bowl
- add:
- 12 cut up slices of cooked bacon
- 1/3 cup chopped spring/green onion
- 1 chopped red onion
- 3/4 cup bbq sauce
- mix with tongs until incorporated.
- place a tortilla into a circle shaped baking form
- add and spread evenly:
- 1/2 cup shredded mixed cheese
- the chicken mixture
- another 1/2 cup shredded mixed cheese
- cover top with another tortilla
- cover tortilla with parchment paper
- place a heavy flat item (large pot, or a couple of plates) over top of the parchment paper
- chill for 1 hour
- dipping sauce:
- 1 1/2 cups of sour cream
- 1/2 tsp onion powder
- 1 tbsp chopped chives
- 1 tbsp chopped parsley
- 1/4 cup mayonnaise
- 1/2 tsp garlic powder
- 2 tsp lemon juice
- 1 tbsp chopped dill
- mix until incorporated - add salt to taste
- take out tortilla/chicken from fridge
- use a cup or an object smaller than the circle form to push out the tortilla/cheese/chicken layered creation (aka remove the circle form) and place on cutting board
- cut into generous slices (approx. 6 pieces - 3 cuts required)
- prepare a plain flour (2 cups seasoned), egg wash (6 eggs whisked), and breadcrumb (3 cups seasoned) station.
- coat each slice in flour, egg wash, then ensure breadcrumbs cover entire piece
- take the coated slice and fry in oil - flipping often - until golden brown
- once all the pieces are fried...
- cover tops with 1/2 cup tomato sauce (evenly spread over all pieces)
- add grated mozzarella
- add pepperoni (approx 18 slices - 3 per piece)
- grill for 5 minutes
- enjoy
