  1. Sausage Pie

  4. Pie Crust:
  5. 3 cups and 3 tbsp all-purpose flour
  6. 17 tbsp cold butter
  7. 0.75 cup ice water
  8. 1 tbsp salt
  9. 1 tbsp sugar
  10.  
  11. Filling:
  12. Sausage
  13. Red and yellow bell pepper, chopped
  14. 1/8 kg shredded cheddar cheese
  15. 1/4 cup fresh cream
  16. Olive oil
  17. 1 red onion, chopped
  18. Salt, pepper, paprika
  19.  
  20. Method:
  21. For the crust:
  22. Mix the dry ingredients
  23. Cut the butter into really small pieces, put on flour mixture
  24. Rub and blend in the butter until it forms soft yellow crumbs (no lumps)
  25. Add the water and make into a dough
  26. Cut third the dough out, wrap each in plastic and refrigerate for 30 mins

  28. For the filling:
  29. In a pan, heat olive oil then add the sausage, pepper and onions
  30. Add salt, pepper and paprika
  31. Cook until pepper is tender
  32. Add fresh cream
  33. Cook for 5 minutes
  34. Add shredded cheddar
  35. Mix well, leave on low heat for 5 minutes

  37. On a flour-covered surface, roll out the 2/3rd of the dough to the size of what you're cooking in
  38. Fold gently
  39. Grease what you're cooking in with butter then coat with flour (Remove excess flour)
  40. Put the dough in, unfold it into the sides
  41. Add the filling
  42. Roll out the third the same way and put it on top
  43. Fold in the edges of the pie, make an opening in the middle
  44. Brush egg whites on top
  45. Preheat oven to 200C
  46. Put in the pie for about 30 minutes or until golden brown
  47. Leave to sit in a warm area (covered) for 15 minutes before serving
