- Sausage Pie

- Pie Crust:
- 3 cups and 3 tbsp all-purpose flour
- 17 tbsp cold butter
- 0.75 cup ice water
- 1 tbsp salt
- 1 tbsp sugar
- Filling:
- Sausage
- Red and yellow bell pepper, chopped
- 1/8 kg shredded cheddar cheese
- 1/4 cup fresh cream
- Olive oil
- 1 red onion, chopped
- Salt, pepper, paprika
- Method:
- For the crust:
- Mix the dry ingredients
- Cut the butter into really small pieces, put on flour mixture
- Rub and blend in the butter until it forms soft yellow crumbs (no lumps)
- Add the water and make into a dough
- Cut third the dough out, wrap each in plastic and refrigerate for 30 mins
- For the filling:
- In a pan, heat olive oil then add the sausage, pepper and onions
- Add salt, pepper and paprika
- Cook until pepper is tender
- Add fresh cream
- Cook for 5 minutes
- Add shredded cheddar
- Mix well, leave on low heat for 5 minutes
- On a flour-covered surface, roll out the 2/3rd of the dough to the size of what you're cooking in
- Fold gently
- Grease what you're cooking in with butter then coat with flour (Remove excess flour)
- Put the dough in, unfold it into the sides
- Add the filling
- Roll out the third the same way and put it on top
- Fold in the edges of the pie, make an opening in the middle
- Brush egg whites on top
- Preheat oven to 200C
- Put in the pie for about 30 minutes or until golden brown
- Leave to sit in a warm area (covered) for 15 minutes before serving
