- 20mins onions
- 35 mins meatballs make/cool
- Meanwhile - make pickle & chop potatoes and boil them
- 8 mins Meatball simmer
- 15 mins sauce making
- All roughly done at once???
- Dice & caramelise an onion for 20 mins in 2tbsp butter, leave to cool
- 475g beef/pork mix, add 44g panko, 60ml whole milk, 1 large egg, salt, pepper, pinch nutmeg, tsp all spice + onions
- Mix, make into meatballs & pop in fridge for 30 mins
- Pan with olive oil/tbsp butter, sear meatballs for 5/6mins until brown all over
- Remove meatballs, add 2tbsp flour, make roux, then add 500ml beef stock & simmer
- Reduce by 1/2, add 200ml double cream, worcestershire sauce, 1tbsp mustard, salt/pepper
- Mix & reduce to get a nice sauce, take off of the heat
- Do your mash potatoes as per - using milk, butter, salt/pepper & nutmeg
- Pickle cucumber - Peel & slice cucumber, add 120ml white wine vinegar, 2tbsp sugar, salt, dill & parsley - squash with another bowl for 30 mins
- Bring the sauce back up to temp as mash cooking, add meatballs & baste them on low
