  1. 2 cups masa harina
  2. 2 cups warm water

  4. Mix well in a large bowl until the dough congeals, adding more water as necessary.

  6. Kneed the dough in the bowl with the palm of your hand – folding, turning, folding, turning - for 3 minutes. If very tacky, use a wet hand.

  8. Roll the dough into a ball.
  9.  
  10. On a floured surface, roll the ball into a rope.
  11.  
  12. Carefully slice the rope into eight equal pieces - cut in half, then those halves in half.

  14. Take each section and roll into a ball.

  16. Roll out into a flat tortilla shape, about 5 or 6 inches across.

  18. Preheat pan to medium-high heat.
  19.  
  20. Place the tortilla on the preheated skillet and start working on rolling out the next tortilla.

  22. Cook the tortilla on the hot pan for a minute or so on each side. The tortilla should be lightly toasted!

  24. Remove the tortillas to a sealed container to keep warm while you finish the batch!
