Shirou's ability to recognise Noble Phantasms is super broken. A single glance is enough, so a memory is all he actually needs.

Also, you can theoretically break the contract a Servant has to their Master all by yourself if you use the contract strengthening you've been doing for people but in reverse. Of course, there's no way you'd be able to actually manage that unless a Servant was completely willing to go along with you, otherwise you'd just get killed.
Nevermind that any Master would be able to feel what you were trying to do.
Still, it's an option.
