- Chicken in Sriracha Sauce with Black Beans
- Serving Size: 4 | Total Time: 25 minutes
- Ingredients
- ½ cup soy sauce
- ½ cup chicken broth
- 3 tbsp honey
- 2 tbsp tomato paste
- 1 tbsp sriracha
- 1 (1 inch) piece fresh ginger, grated
- 3 garlic cloves, grated
- 4 boneless, skinless chicken drumsticks
- 1 tbsp cornstarch
- 1 tbsp water
- 2 tbsp toasted sesame seeds
- 1 tbsp sesame oil
- 2 cups canned black beans
- 2 green onions, chopped
- Directions
- In the cooker, mix soy sauce, honey, ginger, tomato paste, chicken broth, sriracha, and garlic. Stir until smooth; toss in chicken to coat. Seal the lid and cook for 3 minutes on High Pressure. Release the Pressure immediately.
- Open the lid and press Sauté. In a small bowl, mix water and cornstarch until no lumps remain, Stir into the sauce and cook for 5 minutes until thickened.
- Stir sesame oil and 1½ tablespoons sesame seeds through the chicken mixture; garnish with extra sesame seeds and green onions. Serve with black beans
