- For the crust:
- 1 cup all-purpose flour
- 1/2 cup butter, softened
- 1/4 cup sugar
- 2 tablespoons grated lemon peel
- 1 egg yolk
- For the filling:
- 5 packages (8oz each) cream cheese, softened
- 1 3/4 cups sugar
- 3 tablespoons all-purpose flour
- 2 tablespoons grated orange peel
- 2 tablespoons grated lemon peel
- 1/4 teaspoon salt
- 5 eggs
- 2 egg yolks
- 1/4 cup whipping cream
- Crust:
- Heat oven to 400 degrees farenheit. Spray 9x13 pan with
- non-stick cooking spray. Knead all crust ingredients together by
- hand. Press into 9x13 pan pan and back until golden, 8 to 10
- minutes. Let cool.
- Filling:
- Heat oven to 475 degrees farenheit. Beat cream cheese, sugar,
- flour, orange peel, lemon peel, salt, and two eggs in a large
- bowl until mixture is smooth. Continue beating, adding remaining
- eggs and egg yolks, 1 at a time. Beat in whipping cream on low
- speed. Pour into pan, bake 15 minutes.
- Reduce oven temperature to 200 degrees farenheit.
- Bake 45 minutes.
- Turn off oven; leave cheesecake in oven 15 minutes.
- Remove from oven, allow to cool before covering and
- refridgerating for at least 12 hours.
