- 1 quart - Trade Winds Cajun Seasoning
- 4 cups white sugar
- 2 cups kosher salt (skip the salt if using a normal cajon seasoning with salt added)
- ~1 cup granulated (not powdered) garlic
- ~1 cup Coleman's Mustard powder
- 1/2 cup thyme - I get whole thyme, but ground would blend in better
- 1 or 2 TBSP white pepper
- 1 or 2 TBSP Cinnamon
- up to 3/4 C molasses
- ~ 1 TBSP cayenne powder
- fresh grated nutmeg
