- # Red curry lentil soup with spinich and caramilised onion
- **Serves 6 - 8**
- ## Ingredients
- - 2 Cups red lentils
- - 2 - 3 Spanish Onions
- - 2 Bunches of English Spinich
- - 1 Jar of red curry paste
- - 1 Can of coconut milk
- - 1/2 Lemon
- - Olive oil
- ## Method
- 1. Half then thinly slice 2 - 3 large spanish onions (_I used 2 1/2 and saved half for garnish which I didn't end up using_)
- 2. Carmalise by frying in stupid amounts of olive oil for around 40 minutes
- 3. Fry up 1 jar of red curry paste (_I used Ayam brand_) in olive oil for 1 - 2 minutes
- 4. Add ~2 cups lentils, stir and fry for a minute
- 5. add ~6 cups water and 3 home made stock cubes (optional)
- 6. Simmer for 15 minutes
- 7. Add 1 can coconut milk, bring back up to simmer
- 8. Add 2 bunches of english spinich (destemmed) sliced (or whole leaves)
- 9. Add the caramilised onion and some of the oil, reserve remaining oil for another recipe
- 10. Simmer for 3 - 5 minutes
- 11. Squeeze in juice of ~1/2 a lemon and serve
