  1. # Red curry lentil soup with spinich and caramilised onion

  3. **Serves 6 - 8**
  4.  
  5. ## Ingredients
  6. - 2 Cups red lentils
  7. - 2 - 3 Spanish Onions
  8. - 2 Bunches of English Spinich
  9. - 1 Jar of red curry paste
  10. - 1 Can of coconut milk
  11. - 1/2 Lemon
  12. - Olive oil
  13.  
  14. ## Method
  15. 1. Half then thinly slice 2 - 3 large spanish onions (_I used 2 1/2 and saved half for garnish which I didn't end up using_)
  16. 2. Carmalise by frying in stupid amounts of olive oil for around 40 minutes
  17. 3. Fry up 1 jar of red curry paste (_I used Ayam brand_) in olive oil for 1 - 2 minutes
  18. 4. Add ~2 cups lentils, stir and fry for a minute
  19. 5. add ~6 cups water and 3 home made stock cubes (optional)
  20. 6. Simmer for 15 minutes
  21. 7. Add 1 can coconut milk, bring back up to simmer
  22. 8. Add 2 bunches of english spinich (destemmed) sliced (or whole leaves)
  23. 9. Add the caramilised onion and some of the oil, reserve remaining oil for another recipe
  24. 10. Simmer for 3 - 5 minutes
  25. 11. Squeeze in juice of ~1/2 a lemon and serve
  26.
