- Chocolate cookies
- Ingredients
- 4oz butter
- 8oz sugar
- 5 ¼ oz brown sugar
- 1 tsp vanilla essence
- 3 eggs
- 8oz plain flour
- 2oz cocoa
- 1 ½ tsp baking powder
- 12oz chocolate chips
- Method
- Cream together butter, sugar, and brown sugar. Add vanilla essence and eggs (having cracked them first). Mix in flour, cocoa powder, and baking powder. Stir in chocolate chips.
- Grease some baking trays with butter, and cover with a very thin layer of flour (this prevents the cookies sticking as much). Put large teaspoons of the mixture on the baking trays – be careful to separate them quite a bit as they do spread. Cook at 190°C/375°F for about 10 minutes until a fork when inserted comes out clean (or rather with no cookie mixture on it).
- Remove trays, let sit for about 5 minutes (or the cookies break), then remove with a spatula and put on a cooling tray.
- Makes about 48.
