You should upgrade the clients yourself: but you can still use the old clients and connect to the server

Yeah, There is also a possiblity to setup 1 client with the new version and you can test everything and if that is good we can start upgrading the server and the clients afterwards,

Yes of course will give you the updates for 6.8 and 6.9 .
But every 6.8.x has their own patch notes as well. I'm giving you the 6.8 and 6.9 once
