- Preheat oven to 350F.
- 12 oz. Happy Belly Mixed Vegetables, but any frozen veggies will do!
- Per the bag's instructions: Place in a bowl, add 2 tbsp water, cover with a plate, and microwave for 6 minutes.
- Wash and then de-stem your mushrooms. Hold upside down and grip firmly and slowly twist the stem, lifting it from the cap.
- Move the veggies to a tupperware bowl and, using the lid, drain any remaining water.
- Add:
- 1 tbsp Savory Spice Blend

- Toss to coat evenly!
- Scoop out 2/3 cup of the veggie mix and place in a separate bowl, that's all we need for this recipe. Eat the rest, it's delicious!
- Add:
- 1/4 cup vegan cream cheese
- 2 tbsp nutritional yeast
- Mix together well with a spatula.
- Using a spoon, scoop the mixture out and stuff the mushroom caps. Any left over, add to the tops!
- Bake at 350F for 20 minutes!
