Some quick tips on editing your /simc input to sim essences you don't have yet:

Enable all Azerite Essences in Top Gear

Replace your # azerite_essences_available= line with one of these (make sure they end up as one line in the input)

Enable minor slot(s) in Top Gear

Edit the azerite_level= part for your neck. 55 opens up the first minor, 65 opens up the second minor.

For example, if your neck is something like:

neck=,id=158075,bonus_id=6316/4932/4933/1570,azerite_level=50
                                                           ^^

Edit the last bit and change 50 to 55 to show the minor UI in Top Gear to sim the one minor you would have available at 55:

neck=,id=158075,bonus_id=6316/4932/4933/1570,azerite_level=55
                                                           ^^
