  1. 1. Grab a large bowl, grate potatoes on the star grater. It should be fine and chunky like apple sauce. Skim off some of the excess potato water that floats to the top.

  3. 2. Grate onion into the same bowl (Save some for mixing into the ground pork). The onion will keep potatoes from browning too fast.

  5. 3. Add one egg, three tablespoons of flour, one tablespoon of sour cream, one teaspoon of salt and half a teaspoon of black pepper and stir it well so it incorporates.

  7. 4. Mix together the ground pork, your saved grated onion, half a teaspoon of salt and black pepper to taste. Mush them into skinny circles and place them on your worktop.

  9. 5. Heat your pan or skillet over a medium heat and add two or three tablespoons of your cooking oil. Once the oil is hot, add one tablespoon of your potato mixture at a time into the pan or skillet, flattening it out. Top with a thin meat patty and cover the meat with another tablespoon of potato batter closing it in. Saute until potatoes are golden brown then flip and continue the saute until golden brown and cooked through. Repeat with remaining potato mixture, adding more oil as needed. Remove to a paper towel lined plate so it absorbs excess oil and serve warm with a sour cream side.
