- Ingredients:
- 1 jar (12 oz) bulgogi marinade
- 3 lbs boneless pork shoulder
- 2 baguette's or other crispy bread (we used cuban bread)
- 1 cucumber, julienne'd
- 1 large daikon, julienne'd
- 4-5 carrots, julienne'd
- 2 jalapenos, thinly sliced
- 1 bushel cilantro
- Mayonnaise
- 2 tsp salt
- 1 cup sugar
- 4 tsp sugar (separate from above)
- 2 1/2 cups distilled white vinegar
- 2 cup lukewarm water
- Maggi seasoning (drizzle to taste)
- Instructions:
- Pickled Daikon/Carrot Mixture:
- - Rinse and peel daikon
- - Rinse carrots
- - Julienne carrots and daikon
- - Place carrots and daikon in bowl, sprinkle with salt and 4 tsp sugar
- - Knead vegetables for several minutes until they soften and water extrudes
- - Stop kneading when you can bend a strip of daikon into a ring without it breaking
- - Drain into colander and rinse under cold water
- - Press vegetables with paper towel to extrude remaining water
- - Transfer to 2 1 qt jars
- - In bowl, combine 1 cup sugar, vinegar, and water
- - Stir until sugar dissolves
- - Pour over vegetables, seal and refridgerate
- - Serve in 1 hour (lasts up to 4 weeks)
- Meat:
- - Marinate pork shoulder in bulgogi marinade for at least 2-3 hours prior to cooking
- - Place in glass dish with marinade
- - Cook at 375 until done (varies depending upon cut of meat used)
- - Remove from heat, let cool (refridgerate if necessary)
- - Slice into thin slices either by hand or using a mandolin slicer
- Extras (Per each sandwich):
- - use 2-3 roughly chopped cilantro sprigs
- - 3-7 straws of julienne'd and seeded cucumber
- - 2-5 thinly sliced jalapenos (use mandolin slicer)
- - Add mayonnaise
- Bread:
- - Lightly toast bread until crispy
- - Make sammich!
