- Ingredients
- 1/2 cup butter
- onion powder -- to taste (we're simulating 6 tbsp diced white onion)
- 1/2 cup flour
- 8 cups milk
- 1 cup whipping cream
- 1/5 cup shredded parmesan
- 1/2 cup shredded gruyere
- 24 oz macaroni or shells (we like shells!)
- LOBSTER! -- to taste
- 2 Tbsp butter
- salt and pepper to taste
- Steps
- Noodles:
- 1. Lightly salt water in a boiling pot.
- 2. Boil water.
- 3. Add noodles, stirring occasionally until slightly soft but slightly chewy.
- 4. Drain.
- Lobster:
- Pre-Cook -- place fresh lobster in the freezer about 20 minutes before prep. This will freeze the lobster in a nice sleep death.
- 1. Add 1Tbsp salt per quart of water in a large boiling pot until the pot has about 1.5-2 inches of water in the base.
- 2. Bring to a boil.
- 3. Add lobster, face down, rubber bands removed.
- 4. Steam for 20-25 minutes for a 2.5+ lb lobster (9-12 minutes for a 1lb lobster if you have small buddies.)
- Sauce:
- 1. Melt butter in a sauce pan
- 2. Add Onions and sauté for 2-3 minutes
- 3. Add flour, making a roux, cook until lightly golden in color
- 4. Add Milk, stirring constantly. It's best to do this in 2-3 increments. Don't add all the milk at once as you might drop the temperature too much, which changes the flavor.
- 5. Add whipping cream and reduce.
- 6. Salt and pepper to taste.
- 7. Add 1/5 cup Parmesan and 1/4 cup gruyere to 8 cups of sauce.
- 8. Heat until melted.
- Put it all together and serve!
