Pancake batter recipe

  1. 2 eggs
  2. 2 cups (480 mL) milk
  3. 1/4 cup (50 grams) sugar
  4. 1/4 cup (60 mL) oil
  5. 1/4 tsp (2 grams) salt
  6. 3 1/2 tsp (14 grams) baking powder
  7. 2 cups (256 grams) flour

  9. Crack eggs into mixing bowl and whisk until beaten. Add milk then dry ingredients and mix until just combined, leave some lumps. Less mixing = fluffier pancakes/waffles. Oh yeah also works as waffle batter. Use 1/4 cup to pour pancakes onto hot griddle.

  11. P.S. You could sift dry ingredients if you wanted to, never needed to though in the fifteen years I've been using this recipe.
