  1. Recipe:
  2. ¾ths cup unsalted pareve margarine (I use butter instead, but if you want the cookies to be pareve (IE can be eaten with either dairy or meat, you need to use margarine)
  3. 1 cup sugar
  4. 1 egg
  5. ¼th cup of orange juice
  6. 1 and ½ teaspoon vanilla
  7. 3 cups flour
  8. 1 teaspoon baking soda
  9. ½ teaspoon salt
  10.
  11. Cream the margarine/butter and sugar together until light and fluffy. Add the egg and beat well. Stire in orange juice and vanilla and blend (it’ll look weird and lumpy, that’s fine). Add the flour, baking soda, and salt until smooth.
  12.
  13. Chill in the fridge for an hour or more.
  14.
  15. Preheat over to 375F
  16.
  17. Take dough from fridge. Roll out and cut out 3 inch round circles (I use a doughnut cutter/cookie cutter). Place 1 teaspoon filling in the center. This can be either canned filling/jam/or the chocolate recipe to follow. Bring the sides up and pinch to create a triangle.

  19.
  20. Chocolate filling
  21. 1 cup semisweet chocolate chips
  22. 2 tablespoons margarine (or butter, I use butter. This is just for the pareve)
  23. 1 egg, beaten
  24. 1 teaspoon vanilla
  25. 1/3rd cup sugar
  26. ½ a cup toasted walnuts, chopped (I usually don’t toast mine, lazy)
  27.
  28. Melt the chocolate chips and margarine/butter over low heat. Remove from heat and cool. Add the egg, vanilla, sugar, and walnuts to the chocolate mixture and mix well. Use in the hamantaschen recipe where it asks for a filling.
