- STEAMED CHOCOLATE CAKE
- Ingredients
- 1 cup corn oil
- 1 cup evaporated milk
- 1 cup hot water
- A
- 3 grade A eggs (or 4-5 smaller ones)
- 2 cups castor sugar
- B
- 2 cups superfine wheat flour
- 1 cup Van Houten cocoa powder
- ½ teaspoon cream of tartar
- ½ teaspoon bicarbonate of soda (aka baking soda)
- ½ teaspoon baking powder
- STEPS
- 1. Beat A together with an electric mixer for 15 minutes until the mixture expands. Put the electric mixer aside, everything from now onwards is by hand.
- 2. Preheat the steamer.
- 3. Sieve and mix B together in another container. Put aside.
- 4. Add the corn oil and evaporated milk into A, alternating between the two, 1/3 at a time, mixing it thoroughly. Stir until the mixture is smooth.
- 5. Add B into A 3 tablespoons at a time, cutting and folding into the mixture with a spatula until well mixed.
- 6. Add hot water into the mix 1/3 at a time and mix evenly.
- 7. Pour the mix into a baking tin.
- 8. Steam it for an hour or until cooked.
