  1. STEAMED CHOCOLATE CAKE

  3. Ingredients
  4. 1 cup corn oil
  5. 1 cup evaporated milk
  6. 1 cup hot water

  9. 3 grade A eggs (or 4-5 smaller ones)
  10. 2 cups castor sugar
  11.  
  12. B
  13. 2 cups superfine wheat flour
  14. 1 cup Van Houten cocoa powder
  15. ½ teaspoon cream of tartar
  16. ½ teaspoon bicarbonate of soda (aka baking soda)
  17. ½ teaspoon baking powder

  19. STEPS
  20. 1. Beat A together with an electric mixer for 15 minutes until the mixture expands. Put the electric mixer aside, everything from now onwards is by hand.
  21. 2. Preheat the steamer.
  22. 3. Sieve and mix B together in another container. Put aside.
  23. 4. Add the corn oil and evaporated milk into A, alternating between the two, 1/3 at a time, mixing it thoroughly. Stir until the mixture is smooth.
  24. 5. Add B into A 3 tablespoons at a time, cutting and folding into the mixture with a spatula until well mixed.
  25. 6. Add hot water into the mix 1/3 at a time and mix evenly.
  26. 7. Pour the mix into a baking tin.
  27. 8. Steam it for an hour or until cooked.
