  1. Hi, this is a self developed recipe and I love it. So I want to share it with you guys.

  3. 1kg Flower
  4. 1 cube (40g) Yeast
  5. 2 Teaspoon of Sugar
  6. 1/2 Teaspoon of Salt
  7. 1 Teaspoon of Black Pepper Powder
  8. 2 Teaspoon of Sweet Red Pepper Powder
  9. 2 Teaspoon of Caraway Seeds
  10. 300g belly of pork
  11. 4 medium sized Onions
  12. 1/2 litre of Dark Beer (1 Bottle, like Köstritzer or any other dark beer)
  13. 200 ml Milk
  14. 2 Eggs

  16. Optional:
  17. Cut Jalapeno
  18. ~100g of grated cheese

  20. Note:
  21. Take a really big bowl, you gonna need the room for this recipe since yeast multiplies the size of the pastry very much.
  22. Also make sure that all ingridients have room temperature, except maybe the eggs.

  24. Put the milk into the bowl, add the sugar and the yeast. Give it a stir until the yeast is completly dissolved in the milk. Take 3 big spoons of flower and dissolve it in the milk too. Put it aside and let it rest. If the milk is cold, just add a bit of hot water or microwave it for some seconds. It should have bodytemperature at max, otherwise the yeast is gonna die.

  26. Now cut the onions and the belly of pork. How, is up to you. I like it a bit chunky, so I don't cube them. You want to make the porkm a bit smaller than the onions though, otherwise it might be hard to eat.
  27. Put them into a pan with some butter and roast the onions and the pork. When you are done, add a little bit of cold water and make sure that the toasted aroma from the bottom of the pan is dissolved in that water. That makes it even more tasty. Once you are done, have cup of coffee and read some reddit, you gonna let it rest for like 10-15 minutes so the onions and the pork can cool down and the yeast can do it's work.

  29. Now back to work. Add all the flower to the milk after giving it a little stir. The volume should have multiplied a lot. Add the spices, the onions/pork mix, the eggs and the beer to the bowl. And, if you like, the Jalapeno. If you have a jar of Jalapeno, make sure to strain them first. You can vary with the spices, add some more, leave some out, however you want. This recipe is very flexible. Thyme is also good a candidate. But I suggest you really use the caraway seeds, unless you really hate to eat it.

  31. Now, get your stirring gear and attach dough hooks to it. Make sure the pastry gets really mixed up nicely and knit for about 3-4 minutes. Or do it like a boss and use your bare hands. Once it is done, clean the dough hooks and let the pastry rest for about 30 minutes to 1 hour. Put it in a rather warm place, so the yeast is doing it's work.
  32. You can also leave it in the fridge over night, but make sure your bowl is big enough because it (again) multplies it's size. Time to read some reddit, I suggest /r/gaming.

  34. Once it is done, heat your oven to around 200°C and give it another short stir.
  35. You have different options to make your bread:
  36. Either make buns or make a loaf.

  38. If you want buns (to take it to work as example), just put small round Pastryballs on a baking tray covered with baking paper.
  39. If you make a loaf, use a loaf pan or just place it on a tray with baking paper, it's your choice, there is no limit.
  40. Optional: Cover the top with some grated cheese.
  41. Bake it in the oven for about 1.2-1.5 hours, depends on the size. Buns are done faster.

  43. How to eat it:
  44. Fresh and cold Cream Cheese and tomatoes on top of it is just awesome. Or without any additional toppings. However you like. It is awesome, trust me.

  46. Extreme Version:
  47. When making buns or loaf, add half the pastry on the tray/loaf pan. Now add some bacon. Cover the top with some pastry. More awesomeness!
