- Slow Cooker Honey Lemon Chicken is a little sweet, a little tangy and perfect over rice or noodles! It's an easy crockpot meal for those busy days!
- Ingredients
- 1/4 cup low sodium chicken broth
- 1/2 cup liquid honey
- 1/2 cup fresh squeezed lemon juice
- 2 tablespoons low sodium soy sauce
- 1/2 teaspoon salt
- 1 pinch of pepper
- 2 tablespoons corn starch
- 2 boneless, skinless chicken breasts
- 1-2 teaspoons lemon zest optional
- Instructions
- 1.) In a 2.5-4 quart slow cooker, combine broth, honey, juice, soy sauce, salt, pepper and corn starch with a whisk until combined. Add chicken and stir to coat.
- 2.) Cover and cook on low for 4 hours or high for 2 hours.
- 3.) If sauce is thin, mix another 1 tablespoon water and 1 tablespoon corn starch and stir into the sauce to thicken further. If desired, adjust seasonings and add lemon zest if desired (it will make it very lemony!).
- 4.) Serve over hot cooked rice.
