- banana brownies
- vegan and oil free
- 2 cups whole wheat pastry flour
- 2 cups brown sugar
- 1 cup unsweetened cocoa powder
- 1.5 teaspoons baking powder
- .25 teaspoons salt
- 1.25 cups mashed very ripe bananas (about 3 bananas)
- 1/3 of a cup non-diary milk (almond or soy, etc)
- 1 teaspoon vanilla extract
- 1/2 cup of chopped walnuts (optional)
- sift together and mix flour, brown sugar, cocoa powder, baking powder and salt in a large bowl. mash bananas in a small bowl. add non-dairy milk and vanilla to bananas and mix. add wet ingredients to dry mix well. stir in walnuts. put non stick baking paper in a brownie pan or pie pan and spread batter evenly. bake 20-35 minutes at 375F.
