- Add masalas - includes the powders
- If there is no bombay biryani shan masala, then:
- - Increase salt and chilli
- - 4-5 green cardamom
- - 2 large black cardamom
- - 2 inches cinnamon stick, 5-6 cloves
- - 1-2 dried bay leaves
- - 4-5 black peppers
- - 3-4 dried plums, if not, then 2tbs lemon juice
- - pinch of turmeric
- - cumin and coriander powder (1/2 powder each)
- Reduce chilli if you want mild
- Serves 8-10 people
