- Ingredients
- 1 lb. or more of beef (Manager's special was $5 for 1.66 lbs.)
- 1/2 an onion
- 5 medium potatoes (I chose red)
- 1 bag of frozen broccoli (we will use about half of it)
- 1 to 2 cloves of garlic depending on how much you like
- Olive oil
- Seasoning
- -Rinse and dice up the potatoes into small squares and start pre-heating oven to 425 degrees F.
- -Add the diced potatoes into a ziplock bag or bowl with diced 1/2 onion, minced garlic cloves, generous dashes of seasoning (I used BBQ), salt & Pepper, and about 4 tablespoons of olive oil. Shake or stir to combine.
- -Spread potato mix on greased baking sheet, I put a layer of foil for easier clean up. Put in 425F oven for about 22-25 minutes.
- -Steam cook broccoli according to directions and brown the 1lb of beef on a oiled skillet while potatoes cook.
- -Put the cooked potatoes, browned beef, and steamed broccoli in a large bowl and mix! Cover with hot sauce and store in containers for easy work lunch. I usually microwave for about 1 minute and 45 seconds.
