  4. This is a seedy-type bread, more like whole wheat with nuts than a white bread. It isn't a yeast bread, so the flavor is going to be much milder—this means the sunflower and flaxseeds aren't really "optional" if you want the bread to have any flavor. We eat this almost every morning and I mix about 3 batches of dry ingredients at once and stash them in ziplocks so I can just add the eggs/appleasuce/oil/honey and mix.

  9. Notes:
  10. * Toast the (shelled) sunflower seeds in a medium-hot skillet for a minute or two while stirring until they start to get brown and then put them in a ziplock and roll them with a rolling pin until they're crushed up—I toast several recipes' worth at a time, since this is the only time-consuming part of the process
  11. * Make sure your baking powder (or soda, I just use 1/2tsp of baking soda) is fresh
  12. * Add 1/4C of applesauce or (my fave) apple-apricot sauce and reduce the oil by 1/2TB—this makes a much moister bread
  13. * If you eat butter, use melted butter for your oil—I use coconut or avocado oil, and walnut is apparently delicious too. Use the same oil to grease the loaf pans.
  14. * It should be a wet, loose batter—if it feels heavy or holds big peaks when you stir it, add a little more applesauce or some water
  15. * My microwave does one loaf in 2min 15sec—it's done as soon as it's not wet in the center of the top surface, and if you over-microwave it it gets dry—you'll need to play with the timing a little to get it right for your microwave, probably
  16. I cool them for about a minute in the loaf pan, loosen the edges with a fork, and turn them out—you can slice and eat them right away
  17. * The sunflower seeds will turn green! Don't worry, that's just what they do
  18. * I eat mine with salt on top or with honey
  19. * This would be good with some dried fruit and cinnamon+vanilla mixed in, and maybe maple syrup subbed in for the honey, for a fall spice-bread

  21. They're nothing like Proper Bread, but they are so easy and good that I love them anyway.
