  3. Ingredients:
  4. 1 Box Jumbo Shells
  5. 2 lb. ground beef
  6. 6 garlic cloves, pressed
  7. 6-10 oz. baby spinach, washed and drained by squeezing on paper towels
  8. 1 teaspoon oregano
  9. 1 small bushel basil
  10. Salt and Pepper, to taste
  11. 2 (28 ounce) Fire Roast tomatoes
  12. 1 (54 ounce) box Pom (or other tomato puree)
  13. sugar
  14. balsamic

  16. 32 oz. whole milk Ricotta cheese
  17. 1 1/2 cup parmesan cheese, grated (1 cup for mixture, 1/2 cup for baking)
  18. 1 cup provolone cheese, grated
  19. 10 oz cream cheese with chives/onions
  20.  
  21. 4 (or More) cup mozzarella cheese, shredded
  22.

  24. left over Mozzarella for topping and baking

  28. Directions:
  29. - Turn Oven to 375
  30. - Boil water for shells
  31. - Roughly chop basil
  32. - Brown ground beef in pan
  33. - Add garlic to beef
  34. - Cook beef until done
  35. - Reduce heat to low-medium and add oregano, basil and spinach
  36. - Once spinach is wilted, remove mixture from pan, place in bowl, cover.
  37. - Grate Cheeses
  38. - Add fire roasted tomatoes to pan, return to high heat
  39. - Crush tomatoes to desired size
  40. - Add pom and stir
  41. - Reduce heat to low, bring to a simmer
  42. - add sugar and balsamic to taste
  43. - Add meat mixture to sauce mixture
  44. - Keep on low heat, stirring occasionally
  45. - Cook shells for half recommended duration or about 6 minutes (we slightly under cook them before stuffing and baking them)
  46. - Remove half-cooked shells, place on baking tray with paper towels underneath, let dry and cool.
  47. - Add cheeses for stuffing in bowl, mix (ricotta, 1 cup parmesan, 1 cup fontina, 1 cup provolone, 1/2 cup mozzarella, cream cheese)
  48. - Beat 2 eggs, add to cheese mixture, stir.
  49. - Using a spoon, fill the shells with cheese mixture
  50. - Layer bottom of glass baking dish with sauce
  51. - Place filled shells on layer of sauce in baking dish
  52. - Cover shells with remaining sauce
  53. - Apply baking cheese liberally (mozzarella and parmesan)
  54. - Place in oven for 20-25 minutes until cheese is thoroughly melted and starts to brown
  55. - Remove from oven, let sit 5 minutes, and serve!

  57. Garlic Bread:
  58. Ingredients:
  59. 1 cup butter
  60. 8 cloves garlic, pressed
  61. 1 tbsp oregano
  62. 1/2 of a french loaf
  63.  
  64. Directions:
  65. - Slice loaf into 1.5" thick slices
  66. - Melt butter
  67. - Add garlic and oregano
  68. - Stir
  69. - Dredge slices in butter mixture
  70. - Place slice side face down on baking tray
  71. - Using a spoon, drizzle some of the portion of the mixture containing garlic onto the slice
  72. - Repeat until all slices are done, making more butter mixture as necessary
  73. - Drizzle remaining mixture over slices
  74. - Bake at 375 until the bread starts to harden, about 5-10 minutes
