- Ingredients:
- 1 Box Jumbo Shells
- 2 lb. ground beef
- 6 garlic cloves, pressed
- 6-10 oz. baby spinach, washed and drained by squeezing on paper towels
- 1 teaspoon oregano
- 1 small bushel basil
- Salt and Pepper, to taste
- 2 (28 ounce) Fire Roast tomatoes
- 1 (54 ounce) box Pom (or other tomato puree)
- sugar
- balsamic
- 32 oz. whole milk Ricotta cheese
- 1 1/2 cup parmesan cheese, grated (1 cup for mixture, 1/2 cup for baking)
- 1 cup provolone cheese, grated
- 10 oz cream cheese with chives/onions
- 4 (or More) cup mozzarella cheese, shredded
- left over Mozzarella for topping and baking
- Directions:
- - Turn Oven to 375
- - Boil water for shells
- - Roughly chop basil
- - Brown ground beef in pan
- - Add garlic to beef
- - Cook beef until done
- - Reduce heat to low-medium and add oregano, basil and spinach
- - Once spinach is wilted, remove mixture from pan, place in bowl, cover.
- - Grate Cheeses
- - Add fire roasted tomatoes to pan, return to high heat
- - Crush tomatoes to desired size
- - Add pom and stir
- - Reduce heat to low, bring to a simmer
- - add sugar and balsamic to taste
- - Add meat mixture to sauce mixture
- - Keep on low heat, stirring occasionally
- - Cook shells for half recommended duration or about 6 minutes (we slightly under cook them before stuffing and baking them)
- - Remove half-cooked shells, place on baking tray with paper towels underneath, let dry and cool.
- - Add cheeses for stuffing in bowl, mix (ricotta, 1 cup parmesan, 1 cup fontina, 1 cup provolone, 1/2 cup mozzarella, cream cheese)
- - Beat 2 eggs, add to cheese mixture, stir.
- - Using a spoon, fill the shells with cheese mixture
- - Layer bottom of glass baking dish with sauce
- - Place filled shells on layer of sauce in baking dish
- - Cover shells with remaining sauce
- - Apply baking cheese liberally (mozzarella and parmesan)
- - Place in oven for 20-25 minutes until cheese is thoroughly melted and starts to brown
- - Remove from oven, let sit 5 minutes, and serve!
- Garlic Bread:
- Ingredients:
- 1 cup butter
- 8 cloves garlic, pressed
- 1 tbsp oregano
- 1/2 of a french loaf
- Directions:
- - Slice loaf into 1.5" thick slices
- - Melt butter
- - Add garlic and oregano
- - Stir
- - Dredge slices in butter mixture
- - Place slice side face down on baking tray
- - Using a spoon, drizzle some of the portion of the mixture containing garlic onto the slice
- - Repeat until all slices are done, making more butter mixture as necessary
- - Drizzle remaining mixture over slices
- - Bake at 375 until the bread starts to harden, about 5-10 minutes
