- Ingredients
- * 2 tablespoons olive oil
- * 1 big white onion, chopped
- * 3 cloves garlic, minced
- * 1 pound ground beef*
- * 1 pound cubed beef
- * 4 (15 ounce) cans beans (variety: kidney, white, black)
- * 1 can (10 ounce) diced tomatoes with habaneros
- * 1 can (14 ounce) roasted diced tomatoes
- * 1 bottle dark beer
- * 1 cup strongly brewed coffee
- * 2 (6 ounce) cans tomato paste
- * 1 (14 ounce) can beef broth
- * 2 tablespoons chili powder
- * 1 tablespoons chipotle chili pepper powder
- * 1 tablespoon ground cayenne pepper
- * 1 tablespoon cumin powder
- * 1 teaspoon dried oregano
- * 1 teaspoon ground coriander
- * 1 teaspoon salt
- * 1/2 cup packed brown sugar
- * 1 tablespoon unsweetened cocoa powder
- * fresh peppers, diced (I usually use 2 jalepeno + 1 serano)
- Directions
- 1. Heat oil in a large saucepan over medium heat. Cook onions, garlic, half the fresh peppers, ground beef and cubed sirloin in oil for 10 minutes, or until the meat is well browned and the onions are tender.
- 2. Mix in the diced tomatoes with juice, dark beer, coffee, tomato paste and beef broth. Season with brown sugar, chili powder, cumin, cocoa powder, oregano, cayenne pepper, coriander and salt. Stir in 1/2 the white/kidney beans**, rest of fresh peppers. Reduce heat to low, and simmer for 1 hour.
- 3. Stir in the rest of the beans and simmer another hour.
- * I sometime grill burgers a couple days in advance, making an extra one or two, and cut them into cubes to be put in place of 1/4 pound of ground meat. I hold them off until everything else is combined and simmering for 30 minutes to an hour. The ground meat tends to blend in but the cubes of hamburger add a nice texture along with the cubed beef.
- ** 1 can navy beans (most put in immediately), 1 can black beans (few put in immediately), 1 can each of light and dark kidney beans (half put in immediately). I put the rest of the beans in closer to the 1 hour mark.
