  1. Black Bean Cheese Dip

  3. Ingredients:
  4. - 2 cups sharp cheddar
  5. - 1 1/2 cup milk
  6. - 1/2 cup Greek yogurt
  7. - 1 tbsp butter (plus some extra for sauteeing)
  8. - 1 tbsp flour (plus some extra to thicken the cheese sauce if it's not to desired thickness)
  9. - 1 yellow onion (diced)
  10. - 2 jalapenos (seeded and diced)
  11. - 1 medium tomato (seeded and diced)
  12. - 1 can black beans (rinsed)
  13. - 1/2 tsp cumin
  14. - 1/2 tsp cayenne pepper

  16. Directions:
  17. Sautee onions in butter until translucent. Add jalapenos and cook until onions and peppers are soft. In a separate pot create a roux. Melt butter on medium/low heat and add flour. Whisk for about one minute. Add milk and whisk. Heat until milk thickens whisking occasionally. Add cheddar and stir until melted. Add yogurt and stir to mix. Add the sauteed onions and peppers along with the rest of the ingredients to the hot cheese sauce. Let simmer uncovered to thicken (if cheese is not at desired thickness, slowly add flour and stir until desired thickness is reached). The cheese sauce will thicken when it cools.

  19. Note: The yogurt may separate in the mixture. Don't worry about it. It looks a bit funky but it doesn't change the flavor.
