- Pistachio pesto with Spaghetti.

- It's your big night. She's finally coming over to your place.
- You put on some Barry White, poor a nice red wine, light some candles...
- But what are you serving as dinner?
- Here's what you need
- Spaghetti for 2 persons
- 50 grams of parmesan choose
- about 15 grams of basil
- Olive oil 60ml
- 1 tomato, peeled and diced
- Parsley 12gr
- Small clove of garlic
- 1 teaspoon lemon zest
- 75 gr peeled pistachio nuts
- Just a little bit of cognac for taste
- And here's how you prepare the dish
- Heat some olive oil in a pan and bake the tomatoes on a low fire. Take the herbs, tomato, garlic, lemon zest and pistachio nuts and put them in the food processor, process it until it's a smooth paste adding the extra oil until you have a nice sauce adding pepper, salt and the cognac according to taste.
- Now cook the pasta and mix the pesto through the pasta after draining. And you're ready!
