Beer, Cheese & Bacon Dip

  1. Beer, Cheese & Bacon Dip

  3. Twas' a cold night here in the Coona residence, and I figured. Why not make some beer cheese to warm me up?

  5. This dish is great for those cold nights, family/friendly get-togethers/parties, or even an excuse to use some leftover beer.

  7. Ingredients are as follows
  8.  
  9. 5oz Evaporated Milk
  10. 4 Slices of Bacon
  11. 2 tbsp Hot Sauce *Sriracha can also be used*
  12. 12 oz Cheese *Preferably Cheddar, Fresh Grated... But packaged works as well*
  13. 1 bottle/12 oz Any Beer *I used nut brown ale... It's all that was left in the fridge*
  14. 1 tbsp Worcestershire Sauce
  15. 1 tbsp Dijon Mustard
  16. 2 Garlic Cloves *minced*
  17. 1 tsp Corn Starch
  18. Salt To Taste
  19. Pepper To Taste

  21. Estimated Prep Time - 5/10 minutes
  22. Estimated Cook Time - Roughly 10 minutes
  23. Serving Size - Roughly 3 cups

  27. *Best to start in a pot*

  29. Cook the 4 strips of bacon to your preference. I like it crispy, so I just cooked them in a pot on medium heat.

  31. While the bacon is cooking it'd be a good time to mix your cornstarch with the cheese. best to use a bowl.

  33. Once bacon is cooked, remove the strips and place on top of a napkin covered surface, mostly to help drain the leftover grease.

  35. Remove the leftover bacon grease from the pot, be sure to wipe as much bacon grease from the inside as you can. It's totally fine to leave little chunks of bacon in there.

  37. Once the pot is clean add your beer, minced garlic, evaporated milk, worcestershire sauce, dijon mustard and cook on low/medium - medium heat till it starts to simmer a bit. Be sure to whisk gently often.

  39. While the mixture is cooking, it'd be a good time to start dicing up the bacon strips!

  41. Once it starts to simmer, add your cheese/cornstarch, bacon bits, and hot sauce. Whisk frequently till combined. *Keep on a lower heat*

  43. Once the cheese looks silky n smooth add your salt and pepper to your liking.

  45. And Voila!! You now have delicious beer cheese! It stores great, doesn't get too hard when in the fridge. Heats back up well too.
