- Roget: I heard you had a fruit vodka recipe
- Dr Kens: I do. Remind me to pass it on to you.
- Roget: I want vodka
- Dr Kens: Oh, right.
- Dr Kens: You wanted some recipes for fruit-infused ones, right?
- Roget: si
- Dr Kens: Favorite fruits?
- Roget: Pineapple, Mango, Strawberry, Oranges, Cherries
- Dr Kens: Awesome.
- Dr Kens: I have excellent news for you.
- Dr Kens: I've done infused vodkas with three of those five.
- Dr Kens: And I've done lemons instead of oranges.
- Dr Kens: And I know Cherries can be done in a similar way.
- Roget: YAY
- Dr Kens: Okay.
- Dr Kens: So the general principal is you want to cut up the fruit into small chunks to be able to infuse their flavors into the vodka as easily as possible.
- Dr Kens: But you need to pay attention to the ripeness, too.
- Dr Kens: The vodka will taste like the fruit, so if you have a sour/unripe fruit, you'll get those notes exaggerated.
- Roget: Okay, Oranges, Mangos are coming into season
- Dr Kens: For Pineapple, Strawberries, and Oranges, because there's a lot of fiber/structure, you can cut up the pieces into about half-inch cubes/pieces without worrying about the pieces disintgrating.
- Dr Kens: And for oranges make sure you zest the peels.
- Dr Kens: Take a vegetable peeler and zest that way.
- Dr Kens: Keep as little of the white pith as possible.
- Dr Kens: Another orange-specific issue: It's slightly bitter, so cook it in a simple syrup. For a 375 mL bottle of vodka, I use about 1/2 C of Sugar and Water, and a tablespoon or two of orange/lemon juice.
- Dr Kens: Doesn't have to be for long. Just make the syrup as normal and add in the orange peels with the sugar.
- Dr Kens: For mangoes, you'll have to be a bit more careful.
- Dr Kens: Again, as ripe as possible without it being mush.
- Dr Kens: It WILL make the vodka cloudy becasue it'll disintegrate, but you can either filter it out with cheese cloth and a fine wire-mesh, or just leave it in. (I recommend that you filter as much as you can out.)
- Dr Kens: That's just the fruit part.
- Dr Kens: You can add spices.
- Dr Kens: For pineapple and mango, vanilla sticks and cinnamon lend themselves really well to the flavors.
- Dr Kens: So put a stick of vanilla in each, and about half a stick of cinnamon.
- Dr Kens: Once you have them all in a mason jar (preferred, as this is the easiest way to add the fruit), add the vodka and put in a cold dark place or the fridge.
- Dr Kens: Shake twice daily. Once in the morning, once in the evening.
- Roget: I have a ton of mason jars

- Dr Kens: And that's pretty much it! The one thing I have left to tell you is the time.

- Dr Kens: So, real rough estimates for time: Pineapples - ~7 days, Mangoes - 5, strawberries (and/or kiwis) - 5-7, oranges - 20+, cherries - ~5-7
