You can buy as much as you like, but the prices will change while you purchase. So for example, if the market has 50 apples worth 3 gold each and you buy 40 apples, the price of the apples will raise during your purchase, so the last apples you buy might cost 6 gold per apple.
You can sell as much as you like, but the market has a limited amount of gold. It will stop buying when it has none left.
