  1. Shins spicy Bombay Potatoes

  4. Serves 2
  5. Ingredients
  6. 2-3 medium potatoes
  7. 2 tsp turmeric
  8. Pinch of salt
  9. 1 tbsp ghee (or 1tbsp butter and 1 tbsp veg oil))
  10. 1 onion, finely sliced
  11. 1 tsp garam masala
  12. 1 tsp mustard seeds
  13. 1 tsp brown mustard seeds
  14. 1 tsp turmeric
  15. 1 tsp chilli powder
  16. A few curry leaves
  17. 1 tsp Cumin
  18. 1 tsp coriander
  19. 2cm piece of fresh ginger, grated
  20. Pinch of salt
  21. Pinch of sugar

  24. Peel and dice the potatoes into 2cm ish cubes. Place in a pan
  25. of cold salted Water and add the turmeric. Bring up to the
  26. boil and cook for 5-8 minutes or until the potatoes are
  27. starting to soften yet still hold their shape. (use a butter knife to test spuds, a sharp knife is not the same and will make them feel softer than they are)

  29. In a sauteuse pan/ deep frying pan, melt the ghee or butter&oil
  30.  
  31. Add the onion and soften for 5- 10 minutes. Add the spices and ginger and cook for 2 mins, turn the heat down and put a lid on
  32. Drain the potatoes and gently mix into the spicy onion mix and then add the salt and sugar
