- Shins spicy Bombay Potatoes
- Serves 2
- Ingredients
- 2-3 medium potatoes
- 2 tsp turmeric
- Pinch of salt
- 1 tbsp ghee (or 1tbsp butter and 1 tbsp veg oil))
- 1 onion, finely sliced
- 1 tsp garam masala
- 1 tsp mustard seeds
- 1 tsp brown mustard seeds
- 1 tsp turmeric
- 1 tsp chilli powder
- A few curry leaves
- 1 tsp Cumin
- 1 tsp coriander
- 2cm piece of fresh ginger, grated
- Pinch of salt
- Pinch of sugar
- Peel and dice the potatoes into 2cm ish cubes. Place in a pan
- of cold salted Water and add the turmeric. Bring up to the
- boil and cook for 5-8 minutes or until the potatoes are
- starting to soften yet still hold their shape. (use a butter knife to test spuds, a sharp knife is not the same and will make them feel softer than they are)
- In a sauteuse pan/ deep frying pan, melt the ghee or butter&oil
- Add the onion and soften for 5- 10 minutes. Add the spices and ginger and cook for 2 mins, turn the heat down and put a lid on
- Drain the potatoes and gently mix into the spicy onion mix and then add the salt and sugar
