- Kolokythakia Tiganita
- Ingredients
- 2 lbs zucchini, washed, trimmed, and cut into 1/3 inch rounds or slices
- flour, for dredging
- 2 cups ice cold water
- vegetable oil, for frying
- salt
- Skordalia or Tzatziki, for serving
- Directions
- Place zucchini in a ziploc bag. Add flour, and shake the bag to coat zucchini with flour well.
- Heat oil in a large skillet set over medium high heat until hot but not smoking. Remove a zucchini slice from the bag, shake off excess flour, dank it into the cold water and immediately fry in skillet. Repeat with remaining zucchini slices, frying them in batches, until golden brown on both sides. Remove each batch and place in a paper towel lined baking sheet to drain. Season with salt.
- Serve immediately, accompanied by skordalia or tzatziki.
- Yield: 4 servings
