This is because if you use your in a situation where gramatically speaking, you should have acutally used "you're" people will assume a) you dont know the difference or B) you're simply being negligent. Howerver, if you use you're in a situation where you SHOULD have used YOUR then people will think what a fool. Anyway, you're means you are. "your" is possessive. As in that is your ice cream.
