Pilau rice

  1. Shins Yellow rice of win
  4. Serves 2
  6. Ingredients
  7. 100g basmati rice
  8. 200ml chicken stock
  9. 2 cardamon pods
  10. 1/4 tsp turmeric
  11. ( 1 bay leaf
  12.  Pinch of sugar
  13. Salt and freshly ground black pepper
  16. Rinse the rice in cold Water until the water becomes clear,
  17. this removes  excess starch.
  19. Place into a small heavy-
  20. based saucepan with the stock, cardamom, turmeric and
  21. bay leaf.
  22.  Bring up to the boil, with a lid on. Once up to the boil stir
  23. once and then turn the heat down to a simmer and cook
  24. for a further 10 minutes over a low heat. (if you stir it any more air gets under the rice it will then burn to shit)
  26. After 10 minutes turn off the heat and leave with the lid on
  27. for a further 10 minutes.
  28. Try a bit see if its cooked, if not pour in a tiny bit more stock or boiling water, cook back down
  29. Break up the rice with a fork and
  30. season with the sugar, salt and pepper.  Eat
