  1. * 400g lean mince
  2. * 200g pancetta
  3. * 1 large onion, diced
  4. * 1 carrot, finely diced
  5. * 2 celery sticks, finely diced
  6. * 2 cloves of garlic
  7. * 2 tins of chopped tomatoes
  8. * Glug of red wine
  9. * Loads of finely chopped basil
  10. * Tomato puree to taste
  11. * Dash of Worcestershire sauce
  12. * 1 tablespoon of parmesan
  13.  
  14. 1. Sweat garlic, pancetta, onion, celery and carrot in a large pan
  15. 2. Add mince, brown it
  16. 3. Add tomatoes, stir in
  17. 4. Add everything else, adjusting to taste as you cook it over the next few hours
  18. 5. After a good few hours on a low heat, serve with fresh spaghetti, topped with fresh basi leaves and parmesan
