- Oatmeal Chocolate Chip Cake (Family recipe on Mom’s side.)
- 1 ¾ cups boiling water
- 1 cup uncooked oatmeal
- 1 cup packed brown sugar
- 1 cup sugar
- ½ cup butter softened
- 3 eggs
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon unsweetened cocoa powder
- 1 ¾ cups semi-sweet chocolate chips
- In a mixing bowl, pour water over oatmeal. Allow to stand 10 minutes. Add sugars and butter, stirring until the butter melts. Add eggs one at a time. Sift baking soda, flour and cocoa together in a separate bowl and then add to batter. Mix well. Stir in half the chocolate chips, reserving the other half. Grease a 13in x 9in baking pan, pour batter in and evenly sprinkle the rest of the chocolate chips over the batter. Bake at 350 degrees 40 minutes. The cake should have risen, be slightly crisp around the edges yet still have a dense sponge in the center.
