- Campfire Chicken Fajitas
- Ingredients:
- 1 lb. boneless, skinless chicken breasts, cut into thin strips
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 2 tbsp. olive oil
- 2 tbsp. fajita seasoning
- Salt and pepper, to taste
- 8 flour tortillas
- Optional toppings: shredded cheese, chopped tomatoes, sliced avocado, sour cream, salsa
- Instructions:
- Heat a large skillet over the campfire or on a grill grate with high heat.
- Add the olive oil, sliced onions, and bell peppers, and cook until the vegetables are softened and slightly charred, stirring occasionally.
- Add the minced garlic and chicken strips to the skillet, and sprinkle the fajita seasoning, salt, and pepper over the top.
- Cook the chicken and vegetables for 8-10 minutes, or until the chicken is cooked through and no longer pink inside.
- Warm the flour tortillas over the campfire or on a grate over low heat.
- To assemble the fajitas, spoon the chicken and vegetable mixture onto the center of each tortilla.
- Add your desired toppings, such as shredded cheese, chopped tomatoes, sliced avocado, sour cream, or salsa.
- Fold the bottom of the tortilla up over the filling, then fold the sides in and roll up tightly.
- Serve the chicken fajitas hot, garnished with additional toppings if desired.
- Note: You can use other types of meat or seafood, such as beef, shrimp, or fish, instead of chicken in this recipe. Also, you can add other vegetables, such as sliced mushrooms or zucchini, for extra flavor and nutrition.
