  2. i dont measure things out, i eyeball it.so this is all very approximate

  4. 1 medium sized pot. not too big, but too small and you die.
  5. 1 1/2 stick/cup butter or oil w/e. you can cook some bacon and use this as the oil too.
  6. 1 cup or so of flour
  7. 2 tbs diced garlic (not necessary but is good)
  8. 4 cups or so of milk
  9. pinches of thyme, pepper, rosemary, salt.
  10. 1 cup stock/broth. i use vegetable or chicken
  11. 2-4 cups potato, peeled and chopped up
  12. 1 big onion. preferably yellow or white
  13. 1 cup extra diced up veggies like a carrot or celery or something
  14. some bacon if you want idk i used some real bacon bits i had in the fridge. you can use ham too.

  16. melt the butter/heat the oil on med-high. not super high, youll burn the roux. dice up the onion and garlic and throw it in. let them cook for a bit until it starts lookin brown and tastey. slowly stir in the flour until it makes a roux. which is like, a brown paste. dont dump it in all at once or you die.

  18. add the potatoe and veggies and seasonings to taste, then slowly stir in the broth and milk, keep stirring because that roux will thicken that shit up so fast. add more milk and broth if you need. its supposed to look real creamy and chunky rn, but if it looks watery, just let it cook off dont add more flour ok.

  20. bring it to a boil (be careful, it pops), while stirring, then drop it to low-med (like a 5) and cover it. check on it often and keep stirring it. youll know its done when its super thicc and starts forming this like, film. bring out a big chunk of veggie/potato and see if it cuts clean through. then its done bb. takes like fifteen minutes. dont burn it ok i love you
