  1. Bacon Onion Jam

  3. 6-8 strips of thick cut bacon
  4. ~6 Medium-large Onions
  5. 1 Stick of butter
  6. 1 Cup red wine vinegar
  7. Pepper to taste
  8.  
  9. Quarter and then slice the onions
  10. Slice the bacon into lardons, and place in the bottom of a cold dutch oven or large high-sided pan.
  11. Place pan over a medium heat, and slowly cook the bacon to render the fat
  12. As the bacon starts to crisp up, add the butter and melt
  13. Once the butter is melted, add the onions and mix. If the pan is too full, mostly cover to soften the onions, then mix to coat in the fat.
  14. Cook on a medium to medium-low heat until the mixture starts to brown, then add the red wine vinegar, and pepper as desired.
  15. Continue to cook down until it reaches the desired consistency. Should be thick and jam-like.
  16. Use as the greatest burger topping on the planet.
