- Bacon Onion Jam
- 6-8 strips of thick cut bacon
- ~6 Medium-large Onions
- 1 Stick of butter
- 1 Cup red wine vinegar
- Pepper to taste
- Quarter and then slice the onions
- Slice the bacon into lardons, and place in the bottom of a cold dutch oven or large high-sided pan.
- Place pan over a medium heat, and slowly cook the bacon to render the fat
- As the bacon starts to crisp up, add the butter and melt
- Once the butter is melted, add the onions and mix. If the pan is too full, mostly cover to soften the onions, then mix to coat in the fat.
- Cook on a medium to medium-low heat until the mixture starts to brown, then add the red wine vinegar, and pepper as desired.
- Continue to cook down until it reaches the desired consistency. Should be thick and jam-like.
- Use as the greatest burger topping on the planet.
