  1. For teh Marinade:

  3. 1/3 cup olive oil
  4. 1 tablespoon soy sauce
  5. 1 teaspoon honey
  6. 3 cloves of garlic, minced
  7. 1 tablespoon curry powder
  8. 1 teaspoon ground coriander
  9. 1 teaspoon ground tumeric
  10. 1 teaspoon ground cumin
  11. salt & pepper to taste

  13. 2 pounds of skinless chicken breasts, cut into 1 inch cubes.

  15. Combine all of the ingredients in a bowl.
  16. Add chicken pieces and mix well.
  17. Cover and marinate in teh refrigerator for 2 hours.

  19. Stab chicken bits with skewers and grill over hot coals....
  20.  
  21. Note: We don't bother with stabbing, and use an electric griddle - cook about 5 minutes on each side. Altogether about 10-15 minutes of cooking. Chicken's internal temperature should be around 75 degrees.

  23. Serve with peanut sauce
