- Avocado pasta
- This pasta recipe has become a big hit in Finland. The original recipe is from a cookbook called "Safkaa" and can be found online here (in Finnish).

- (Serves 4)
- 1 clove of garlic
- half of a red chilli, deseeded (or chilli flakes to taste)
- 1 lime
- 2 ripe avocados
- salt and pepper
- a drizzle of olive oil
- a handful of fresh basil
- a handful of flat-leaf parsley
- 1 dl or 30 grams each of grated parmiggiano and pecorino cheese
- 400-500 grams of spaghetti or other pasta
- Mince the garlic and chilli into a big bowl. Squeeze in the lime juice. Add the chopped avokado. Add chopped herbs, cheese and olive oil and season with salt and pepper. Cook the pasta until it is al dente. Reserve some of the salty and starchy cooking water. Drain the pasta and toss it in with the sauce. Use some of the cooking water to bring it all together.
