  1. # Arroz con Pollo (Gonzalez Family)
  2. ## Serves 4 (it says I swear it serves more than that)

  4. ## Ingredients
  5. * 2 tablespoons olive oil (can use up to 1/4 cup)
  6. * 1 large onion, diced
  7. * bell pepper, diced (or 2 I won’t tell anyone)
  8. * garlic clove, minced (I use 2 or 3)
  9. * cups of medium or long-grain white rice
  10. * 3 cups* chicken stock (or vegetable stock if vegetarian)
  11. * 1 heaping tablespoon tomato paste or 1 cup of diced fresh or cooked tomatoes, strained (Mom used tomato paste, I use the canned diced tomatoes.
  12. * Pinch of Saffron (about 3 threads pulverized - that’s what the original note says I use like 8)
  13. * Pinch of oregano (teaspoon-ish? I do this to taste)
  14. * 1 bay leaf
  15. * 1 lb of chicken (boneless breasts, and deboned thighs)
  16. * Salt and pepper

  18. *Check the instructions on the rice package for the proportions of liquid to rice. They can range from 1:1 to 2:1. If your rice calls for 2 cups of water for every cup of rice, then for this recipe, use 4 cups of stock for 2 cups of rice and adjust the seasoning accordingly.*

  20. ##Method
  21. 1. In a large skillet sauté the chicken in some olive oil, season the chicken with salt and pepper. Remove the chicken and bake in a 350 degree oven for about 30 minutes covered. Add the onion and garlic to the pan and sauté over medium heat. Cook onion, garlic, pepper mixture, stirring frequently, about 4 minutes, or until onions are softened.
  22. 2. In a separate sauce pan bring stock to a simmer. Add tomato stuff, saffron, oregano, and bay leaf. Add rice, onions, peppers, and garlic to broth. Add some salt. (The rest of this is just really cook the rice based on what the instructions say to do) Bring to a simmer. Cover. Lower heat and cook 15-25 minutes, depending on the type of rice and the instructions on the rice package. Turn off heat and let sit for 5 minutes.
  23. 3. To serve, remove bay leaf from rice, put the rice in a deep serving dish, place the chicken pieces on top. Shove in mouth hole.
